Phyllo wrapped Asparagus and Artichokes

Recipe Ingredients for Phyllo wrapped Asparagus and Artichokes

12 artichoke hearts, canned
20 asparagus spears
2 tbsp vegetable broth
2 tbsp Shallots, chopped
1 tbsp oregano, chopped
1 tbsp white wine
4 tsp olive oil
2 tsp Dijon mustard
1 garlic clove, minced
1/4 tsp salt
1/4 tsp black pepper, ground
24 sheets phyllo pastry

Recipe Directions for Phyllo wrapped Asparagus and Artichokes

  1. Cook asparagus and artichoke hearts. Drain and set aside.

  2. Put all remaining ingredients in blender and process until smooth. Drizzle over vegetables; toss well to coat. Cover tightly and refrigerate for up to 8 hours.

  3. Reheat asparagus and artichoke salad and chop finely.

  4. Fold 1 sheet phyllo pastry in half lengthwise and spray with cooking spray. Drop 1 Tbsp of Asparagus mixture 1 inch from end of folded phyllo pastry and fold, flag style, to form triangles.

  5. Bake at 375 for 8 - 10 minutes.
