Make a big batch of these and freeze them for later! Great for lunch or dinner. Use cooking spray instead of butter to save some calories.

Recipe Ingredients for Phyllo Chicken Rolls

2 bell peppers, chopped
2 onions, chopped
4 garlic cloves, minced
1 tbsp extra virgin olive oil
1 cup light ricotta cheese
2 large eggs
2 cups shredded light cheddar cheese
1/2 cup grated parmesan cheese
4 cups chicken, cubed and cooked
16 sheets phyllo pastry, thawed
1/2 cup butter, melted

Recipe Directions for Phyllo Chicken Rolls

  1. Saute peppers, onion, and garlic in oil until just tender. Allow to cool.

  2. Combine ricotta and eggs, then add cooked chicken and both cheeses. Mix well. Add vegetables and mix again.

  3. Gently place a sheet of phyllo on a cookie tray and brush with butter. Top with a second sheet of phyllo.

  4. Spoon about 1/8 of the filling onto the phyllo sheet and roll up, folding in the edges as you go. Brush entire roll with butter, paying attention to make sure the edge is sealed.

  5. Repeat with remaining pastry and filling.

  6. Bake in a preheated 375F oven for about 15 minutes; OR

  7. Wrap rolls individually in plastic wrap and freeze. To reheat: partially thaw roll overnight in the fridge. Brush with 1 tbsp melted butter. Bake at 375F for 40 - 50 minutes. Let stand for 10 minutes before serving.
