Recipe Ingredients for Phuket Grilled Shellfish with Green Chili Sauce

1 lbs shrimp, preferably extra-colossal
6 oz jalapeno peppers, stemmed, seeded, and chopped
3 cloves garlic, chopped
1/2 c lime juice
1 T brown sugar, firmly packed

Recipe Directions for Phuket Grilled Shellfish with Green Chili Sauce

  1. Devein unshelled shrimp by inserting a toothpick through joints in back of shell beneath vein in several places, gently pulling to remove vein.

  2. Place shrimp on a grill 4 to 6 inches above a solid bed of medium-hot coals ( you can hold your hand at grill level only 3 to 4 seconds,) and cook until flesh is opaque in thickest part (cut to test,) 3 to 5 minutes a side. Transfer seafood to a large platter.

  3. To eat, peel off shell and dip shrimp into green chili sauce.

  4. Make Green Chili Sauce:

  5. In a blender, coarsely purée jalapeños, garlic, lime juice, and brown sugar.
