Recipe Ingredients for Phoenix's Spinach and Feta Omlette

1 cup spinach (fresh or frozen), chopped
1/4 bell pepper, minced
1 ounce feta cheese, reduced fat (Anthenos, reduced-fat traditional chunk), crumbled
1 egg
1/3 cup egg whites (All Whites, Liquid Egg Whites)

Recipe Directions for Phoenix's Spinach and Feta Omlette

  1. Add ingredients to non-stick fry pan, either mixed together or layered, putting the egg on top.

  2. Cover and cook over medium heat until done (or until egg on top is done).

  3. Flip omlette over on itself, and serve.
