Pho (No Noodles) Recipe

This tastes really, really fresh. And has very, VERY few calories. A little heavy on the sodium. (It's the fish sauce)

Recipe Ingredients for Pho (no noodles)

4 c fat free, low sodium chicken broth
1 c water
1 1/2 tbsp fish sauce
2 tbsp sliced fresh ginger
1 tbsp honey
8 oz grilled chicken, sliced
1/2 c sliced scallions
1 c baby bok choy
1/2 c sliced red pepper

Recipe Directions for Pho (no noodles)

  1. Bring first 5 ingredients to an easy boil and cook 5 minutes

  2. Evenly distribute remaining ingredients in 4 deep bowls.

  3. (If you like bok choy softer, microwave dry ingredients for 2 minutes before adding stock.)

  4. Add stock to each bowl to cover.

  5. ps. You can double the stock and keep it refrigerated for up to 4 days. And, you can put shrimp in it, or a piece of leftover grilled fish (don't use salmon)

  6. garnish with a chiffonade of basil, a squirt of lime, and some sliced jalapeno, if you like a little heat
