Recipe Ingredients for Philly's Spicy Potato Salad

7 egg whites
12 red potatoes
1 cup light mayonnaise
1 cup peppers, jalapeņos
2 tbsp dijon mustard
1 large red onion
1/4 tsp black pepper
1 tsp salt
1/8 tsp cayenne pepper
1/8 tsp celery salt
1/2 tsp basil

Recipe Directions for Philly's Spicy Potato Salad

  1. Boil the 12 potatoes then set in the fridge to cool.

  2. Boil the eggs, peel the shells, scoop and discard the yolk.

  3. Chop the egg whites and set aside.

  4. Dice 1 large red onion and set aside.

  5. Dice 1 cup jalapeņos and set aside.

  6. Dice the potatoes and set aside.

  7. In large bowl, combine light mayonnaise, dijon mustard, chopped onion, chopped egg, chopped jalapeņos, black pepper, salt, cayenne pepper, celery salt, and basil. Finally, add in the diced potatoes, stir evenly and let sit at least 2 hours before serving.
