A low fat pasta salad using middle eastern ingredients

Recipe Ingredients for Philip's pasta salad

225 grams pasta
100 grams broccoli florets,
100 grams cauliflower florets,
100 grams baby corn
100 grams carrot, sliced
200 grams red bell pepper, sliced
200 grams green bell pepper, sliced
200 grams tomatoes (cherry)
100 grams zucchini
3 tbs olive oil,
300 grams cottage cheese (baludi cheese if you can get it)
6 cloves garlic, minced
1 scallion, minced
150 grams shrimp, peeled, deveined, and sliced lengthwise in half
200 grams tomato (cherry)
1/2 cup buttermilk (use laban if you can get it)
3 tbs balsamic vinegar,
1 tbs Dijon mustard,
1 tsp black pepper
1/2 tsp salt,

Recipe Directions for Philip's pasta salad

  1. Directions: Prepare the pasta according to package directions, adding the broccoli, carrot, and bell pepper during the last 5 minutes of cooking.

  2. Meanwhile, heat 1 tbspolive oil in a large skillet over medium heat. Add the garlic and schopped garlic and cook for 1 minute.

  3. Add the shrimp and cook, stirring frequently, for 3 minutes, or until the shrimp are opaque.

  4. Remove from the heat.

  5. Meanwhile, in a large bowl, combine the buttermilk, vinegar, 1 tbsp oil, mustard, black pepper, and salt. Add the shrimp mixture and pasta mixture and toss to coat well. Add the peppers, zucchini, baludi cheese and scallions. Toss and chill.
