Recipe Ingredients for Philip's Beans & Artichoke Heart salad

100 grams artichoke hearts (marinated )
50 grams parsley
200 grams red bell pepper, sliced
200 grams green bell pepper, sliced
200 grams tomatoes (cherry)
100 grams zucchini
3 tbs olive oil,
300 grams cottage cheese (baludi cheese if you can get it)
250 grams kidney beans
250 grams garbanzo beans
6 cloves garlic, minced
4 scallions, minced
200 grams tomato (cherry)
4 tbs balsamic vinegar,
1 tbs Dijon mustard,
1 tsp black pepper
1/2 tsp salt,

Recipe Directions for Philip's Beans & Artichoke Heart salad

  1. Chop all the veggies, etc, into bite size pieces.

  2. Mix the olive oil, herbs, seasonings and mix into big bowl with all the other ingredients.

  3. Chill and serve.
