Main dish Austria. Plumbs in a pasta-coat. Pasta made from flour and potatos. Rolled in a mix of sugar, butter and breadcrumbs. Can be served as a dessert too.

Recipe Ingredients for Pflaumenknödel

3 cups potato
1 cup flour, white
2 pound plums
1 egg
2 tbsp butter
1 tbsp salt
1 cup sugar
1 cup butter
9 lb bread crumbs

Recipe Directions for Pflaumenknödel

  1. Cook the potatos with the peel. Peel and mash with the egg and some butter. Let cool.

  2. Bring a large kettle lightly salted water to the boil.

  3. In the mean time add the potatos and a dash of salt to the flour and mix. Don't knead too long or the dough will become chewy.

  4. Form a roll on a floured tabletop and cut slices(+/- 1 inch thick, depending size of the roll). Put 1 plum in each slice, seal well (use some cold water if needed).

  5. Carefully drop a few knödel in the boiling water. When they float they are cooked.

  6. Melt the butter in a large pan over medium heat.

  7. Add the sugar and the breadcrumbs and mix until the sugar is melted. This burns easily so keep mixing, lowering the heat if needed.

  8. Put all the knödel in a bowl, add the sugarcrumbs on top and serve.
