PF Changs Chicken - serve over torn iceberg lettuce.

Recipe Ingredients for pf changs chicken

3 lb boneless skinless chicken breasts
3 tbs canola oil
8 oz water chestnuts
2/3 cup mushrooms
3 tbs chopped onion
1 tbs minced garlic
1/4 cup sugar
2 tbs soy sauce
2 tbs rice vinegar
2 tbs ketchup
1 tbs lemon juice
1/4 tsp sesame oil
4 tbs soy sauce
4 tbs brown sugar
1 tsp rice vinegar

Recipe Directions for pf changs chicken

  1. Make the special sauce by dissolving sugar and 1/2 cup water in a small bowl. Add 2 tbs soy sauce, 2 tbs rice vinegar, 2 tbs ketchup, 1 tbs lemon juice and 1/4 tsp sesame oil. Mix well and refrigerate until ready to serve.

  2. Bring 3 tbs canola oil to high heat in frying pan. Saute chicken breasts till done. Remove from pan and set aside to cool.

  3. As chicken cools mince water chestnuts and mushrooms. Prepare stir fry sauce by mixing 4 tbs soy sauce, 4 tbs brown sugar and 1 tsp rice vinegar.

  4. When chicken is cool mince and return to pan with another tbs of canola oil. Add garlic, 3 tbs onions, water chestnuts and mushrooms. Add stir fry sauce and saute for a couple minutes.

  5. Serve in lettuce wraps or over torn iceberg lettuce, with special sauce on top.
