Good side dish for almost any Mexican meal

Recipe Ingredients for Peter's Mexican Rice

1 cup uncooked long grain rice
1 tbs vegetable oil
1 1/2 cup low sodium chicken broth
1/2 onion (finely chopped)
1/2 green bell pepper (finely chopped)
1 chopped pepper jalapeno
1 tomato (seeded and chopped)
1 tsp chicken base
1/2 tsp ground cumin
1/2 cup cilantro (chopped)
1 clove garlic (smashed and chopped)

Recipe Directions for Peter's Mexican Rice

  1. In medium sauce pan, cook rice in oil over medium heat for 3 minutes.

  2. Pour in chicken broth and bring to boil.

  3. Stir in onion, green pepper, jalapeno, and diced tomato.

  4. Season with chicken base, cumin, garlic and salt and pepper to taste.

  5. Bring back to boil, cover reduce heat to low and cook 20 minutes.
