Ground turkey with Tzatziki Sauce

Recipe Ingredients for Peter's Mediterranean Ground Turkey Pitas

1/2 cup Panko
1/4 cup feta cheese (crumbled)
1 tbs red onion (minced)
2 tbs pesto sauce (home made or commercial)
2 cloves garlic (minced)
1/4 tsp salt
1/4 tsp ground pepper
1 lb ground turkey
2 cups arugula
2 pitas (grilled and halved)
8 oz Voskos Greek Yogurt (Plain, Non-Fat)
1/3 English cucumber (seeded and chopped)
1 tbs extra virgin olive oil
1 1/2 tbs lemon juice (1/2 lemon)
11 1/2 tsp dill (fresh chopped)
2 cloves garlic

Recipe Directions for Peter's Mediterranean Ground Turkey Pitas

  1. Mix first 8 ingredients in a bowl

  2. Cook turkey mixture in large skillet over medium heat until turkey is brown.

  3. To make Tzatziki Sauce:

  4. In food processor combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic.

  5. Process until well combined then transfer to separate bowl, cover and refrigerate at least one hour.

  6. Grill or microwave pitas till warm and pliable and cut in 1/2.

  7. Place generous scoop of turkey mix in 1/2 pita with 1/4 cup arugula and dollop of Tzatziki sauce.
