Recipe Ingredients for Peter's cottage cheese encheladas

1 tbs vegetable oil
2 1/2 cups boneless skinless chicken breast
1/2 cup onion (chopped)
7 oz green chili (chopped)
1 oz taco seasoning mix
1/2 cup sour cream
2 cups low fat cottage cheese
1 tsp salt
288 12 6" tortillas
2 cups Monterey Jack cheese (shredded)
10 oz red enchilada sauce

Recipe Directions for Peter's cottage cheese encheladas

  1. In large skillet over medium heat add chicken, onion, green chili peppers and saute till browned

  2. Add taco seasoning mix and prepare according to package

  3. In medium bowl mix sour cream with cottage cheese add salt and pepper to taste

  4. Heat tortillas till soft (microwave approx 15 seconds)

  5. On each tortilla place spoonful of meat mixture, spoonful of cottage cheese mixture and bit of shredded cheese

  6. Roll tortillas and place in greased 9 X 13 baking dish

  7. Top with remaining meat, cottage cheese and enchilada sauce. cover with remaining cheese and bake in 375 degree oven 45 minutes or till bubbly
