Great way to use locally grown foods - the dark green pesto against the yellow beans is very pretty. If you are not feeding a crowd, cut the beans down to 1.5 lbs and save half of the pesto for pasta later.

Recipe Ingredients for Pesto Wax Beans

3 lbs locally grown yellow wax beans
48 g locally grown basil (about 2 cups, loosely packed)
56 g grated romano cheese (1/2 cup)
1/2 cup pine nuts (64 g)
3 g garlic (2 cloves)
1/2 cup olive oil

Recipe Directions for Pesto Wax Beans

  1. Trim and steam beans until just tender.

  2. Drain beans and plunge into ice water to stop cooking and chill the beans.

  3. Process remaining ingredients until they form a pace - if using a blender, blend everything except the basil on high, then add basil and pulse until smooth.

  4. Drain beans and toss with pesto.

  5. Best if allowed to marinate for a few hours before serving - allow to come to room temperature and toss again before serving.
