A warm and comforting meal with the delicious flavor of basil. Serve with crusty whole-wheat bread and a green salad.

Recipe Ingredients for Pesto Spaghetti

2 cups fresh basil leaves, packed
4 cloves garlic, pressed
2/3 c. freshly grated Parmesan cheese
1/4 cup olive oil
1/2 cup pine nuts, toasted
12 sun-dried tomatoes, re-hydrated and diced
1 lb. angel hair pasta, cooked

Recipe Directions for Pesto Spaghetti

  1. Place first four ingredients in blender and process until smooth.

  2. Stir into pasta along with sun-dried tomatoes and pine nuts.

  3. Serve with extra grated cheese and pine nuts at the table. Extra pesto can be refrigerated up to 3 months or frozen in an ice-cube tray. This trick is especially handy when there is an abundance of fresh summer basil.
