Recipe Ingredients for Pesto, Small Batch

37 grams basil, fresh
1 tbsp lemon juice, fresh
2 tbsp extra virgin olive oil
2 tbsp pine nuts
1 ounce parmesan cheese, finely grated
1 garlic clove, minced
1/8 tsp salt
1/8 tsp black pepper, freshly ground

Recipe Directions for Pesto, Small Batch

  1. Make this spread right after picking the basil.

  2. Wash fresh basil leaves and allow to air dry. Pat dry, if necessary, but be careful not to bruise the leaves, because they will turn black.

  3. Pour lemon juice olive oil and minced garlic into food processor.

  4. Pour in dried basil leaves and stir. Then pulse on low speed for 10 seconds at a time until leaves are about 1/4 inch in diameter.

  5. Add pine nuts and pulse on they are chopped.

  6. Using a spatula, remove contents from food processor and pour onto parmesan. Add salt and pepper. Gently mix until blended.

  7. Refrigerate in a tightly sealed container. Yum!
