Requires constant attention while cooking, but delicious, high-cal, and worth it. Filling enough to eat as a main course (especially if you toss in some blanched asparagus or chopped mushrooms right at the end of cooking).

Recipe Ingredients for Pesto Risotto

6 cups vegetable broth
2 tbsp extra virgin olive oil
1/2 cup onion, minced
3 cloves garlic, minced
1/4 cup white wine
2 cups Arborio Rice
1/2 cup pesto
1 cup Parmigiano-Reggiano cheese, grated

Recipe Directions for Pesto Risotto

  1. Simmer vegetable broth over low heat, you'll be adding this to the rice throughout its cooking.

  2. In large heavy pot, add olive oil and minced onion. Cook onion until nearly translucent over medium-high heat. Add garlic and stir well. Add rice, stirring quickly. Add 1/4 cup white wine and stir until absorbed. Add 1/2 cups simmering broth and cook, stirring constantly, until water is absorbed. Repeat process till rice is tender, about 20 minutes.

  3. Final consistency should be creamy and the rice tender but slightly firm at the center. Turn off heat and stir in pesto and grated Parmigiano-Reggiano. Adjust seasonings if necessary. Serve immediately.
