Pesto dip for chicken, fish and/or vegetables.

Recipe Ingredients for Pesto

1/2 cup freshly grated Parmigiano-Reggiano cheese
1/2 cup fresh parsley
1/4 cup fresh basil leaves
2 teaspoons grated lemon rind
2 teaspoons lemon juice
1 garlic clove, minced
1 1/2 tablespoons extra virgin olive oil

Recipe Directions for Pesto

Combine the first 6 ingredients in a food processor. Add the extra virgin olive oil to the herb mixture. Process until sooth; scraping the sides. Set aside.
