Recipe Ingredients for Pesto-Quinoa-Spinach Quich

1.5 cup Gold Medal All Purpose Flour
2.5 tsp Sugars, Granulated
0.5 tsp Salt, Table
4.5 oz All Vegetable Shortening
0.5 eggs Egg, Scrambled
0.5 fl oz White Vinegar, Distilled, Organic
4 oz Provolone Cheese
0.5 cup Quinoa
2.6 oz Traditional Basil Pesto
1/4 cup Shelled Pine Nuts
10 oz Frozen Cut Leaf Spinach
10 oz Parmesan, Shredded Cheese
4 large egg Eggland's Best Egg
12 oz Organic Half and Half Pint
0.25 tsp Salt, Table
0.125 tsp Pepper, Black

Recipe Directions for Pesto-Quinoa-Spinach Quich

  1. Heat oven 425, cook crust 5 minutes in 9/5 " deep dish glass pie plate.

  2. Toast pine nuts 5-7 minutes in ungreased heavy skillet over medium heat, stir frequently till light brown or leave plain.

  3. Cook Quinoa in 1 c. boiling water, simmer 15 minutes. Stir in pesto, pine nuts, spinach and 1 c Parmesan cheese.

  4. In a large bowl, beat eggs, 1/2 & 1/2, salt pepper w/ wire whisk until well-blended. Gently fold quinoa mixture into eggs. Pour filling into crust. Sprinkle with remaining 1/4 c. Parmesan cheese. Bake at 350 for 35 minutes. Sprinkle w/ optional basil, let stand 10 minutes before serving.
