This recipe is mostly taken from California Culinary Academy's Salad Cookbook, p67 "Pesto and Noodle Salad". The main difference is we put a ton more fresh basil in than they do, which makes it really really delicious. "Bow-tie noodles (also called farfalle or butterflies) are a good vehicle for a vividly colored and flavored basil-and-garlic dressing. You might serve this salad with quickly sauteed shrimp or with an herbed roast chicken."

Recipe Ingredients for Pesto Pasta

8 oz Bow Ties
3 tbsp Vinegar red wine
4 cup leaves, whole Basil, Fresh
0.25 cup Parsley
2 clove Garlic
0.5 tsp Salt, Table
0.25 tsp Sugars, Granulated
0.33 cup Parmesan, Grated Cheese
0.5 cup Olive Oil
2 dash Pepper, Black

Recipe Directions for Pesto Pasta

  1. Cook noodle bows according to package directions. Drain, rinse with cold water, and drain again.

  2. In blender or food processor combine vinegar, basil, parsley, garlic, salt, sugar, cheese, and oilve oil. Whirl or process until smooth and well combined.

  3. Lightly mix noodle bows and dressing. Cover and refrigerate for 1 hour or longer to blend flavors. Serve sprinkled with pepper and garnished with cherry tomatoes.
