pesto - uses chicken broth to substitute for some of the olive oil

Recipe Ingredients for pesto (light)

1 1/2 tbsp Pine Nuts, Pignolia, Dried
30 grams Extra Virgin Olive Oil
62 grams Campbell's Red and White Chicken Broth
3 cloves Garlic
25 grams Fancy Parmesan Shredded Cheese
1 1/4 cup leaves, whole Basil, Fresh
1/2 tsp Sea Salt
0.13 tsp Spices Ground Black Pepper

Recipe Directions for pesto (light)

  1. put all ingredients into food processor. freeze in ice cube trays. each cube is 2 Tbsp (1 serving).

  2. Hint: when thawing do not put in microwave - the cheese will stick together! thaw at room temp...
