Pesto Lasagna Recipe

This delicious lasagna combines spinach, mushrooms and our delicious pesto sauce with three cheeses for a new twist on an old classic.

Recipe Ingredients for Pesto Lasagna

1 cup frozen spinach, drained
1 cup mushrooms
1/4 cup pesto
3/4 cup shredded mozzarella
1 cup ricotta cheese
1 egg
2 tbsp 2% milk
1/2 cup shredded parmesan cheese
1/2 cup bechamel sauce
2 oz lasagna noodles
1/4 cup sundried tomatoes
1 cooking spray

Recipe Directions for Pesto Lasagna

  1. Spray a 5x7 pan with cooking spray.

  2. In a mixing bowl, combine 1 cup spinach, 1 cup mushrooms, 1/2 cup pesto. Set aside.

  3. In another mixing bowl, combine mozzarella, ricotta, liquid egg, milk and 1/4 cup parmesan cheese.

  4. In prepared pan, layer in the following order:

  5. 1/2 cup bechamel sauce

  6. 2 lasagna noodles

  7. 1/2 of ricotta mixture

  8. 1/4 cup sundried tomatoes

  9. 1 cup spinach pesto mixture

  10. 2 lasagna noodles

  11. remaining ricotta mixture

  12. remaining spinach pesto mixture

  13. 1/4 cup parmesan cheese

  14. Cover and label pan.
