Pesto-Inspired Spinach Sauce Recipe

Inspired by pesto. Meant to be used in alternate layers with a Tuna Tomato Sauce (any red sauce will do) in a lasagna dish but can stand on it's own. This was created for Christmas of 2010 hence the alternate layers of red and green sauce. Take note that the serving size is reflected by the lasagna dish. If used alone or in a different dish, the amount of servings will be less and the serving size would be larger. This can be made a day in advance with no problems. You can also change the walnuts into almonds, pine nuts or cashew nuts.

Recipe Ingredients for Pesto-inspired Spinach Sauce

400 g Spinach leaves
1 cup walnuts, roasted
1 cup Fresh Basil leaves
1/2 cup Parsley leaves (optional)
1 cup Extra Virgin Olive Oil
200 ml evaporated milk (preferably full cream)
1/2 tsp Salt
1 tsp ground black pepper
1 tsp paprika (optional)
2 tablespoon cornstarch (optional)

Recipe Directions for Pesto-inspired Spinach Sauce

  1. Wash spinach, basil and parsley in running water. Drain and squeeze water from the leaves.

  2. Chop spinach, nuts, basil and parsley finely (around a couple of millimiters or less in width)

  3. Mix all chopped ingredients together. Add extra virgin olive oil while stirring continuously then leave mixture for around 5-10 minutes.

  4. Add milk, more if needed. Mix. The oil and milk might separate but it'll come together when heated.

  5. Sprinkle salt, pepper and parika to taste.

  6. (optional) Add approx 1 tbsp flour (or 1/2 tbsp cornstarch) to thicken sauce. Mix until well blended. If not using for lasagna, you can skip this step.

  7. In a shallow sauce pan, pour mixture and stir continuously until milk and oil have combined and sauce has thickened to desired consistency.

  8. NOTE: If you have a food processor, you can skip chopping the ingredients. Instead, start with the basil and oil and leave on medium for around 5-10 min before adding the rest of the ingredients one at a time (as mentioned in the ingredient list, minus the oil) while mixing on medium/high. Just make sure that all of the ingredients have been minced finely once you are done. Using a food processor would also mix the oil and the milk together better.
