Recipe Ingredients for Pesto-Infused White Bean & Sun-Dried Tomato Stew

1 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
2 large whole (3" dia) Tomatoes, Red, Ripe
0.25 cup Tomatoes, Sun-dried, Packed In Oil, Drained
3 cup Beans, Small White, Mature Seeds
1 serving TJ's Pesto all Genovese 1/4 cup
1.5 cup Vegetable Stock

Recipe Directions for Pesto-Infused White Bean & Sun-Dried Tomato Stew

  1. Saute onions in oil for 5 min

  2. Put everything except pesto in the slow cooker

  3. Cook on low for 6-8 hours

  4. Mix in pesto before serving
