Recipe Ingredients for Pesto fish kebabs

1 cooking oil spray
600 grams fish fillets (firm)
1 tbs pesto
1/2 cup parsley (flat leaf)
600 grams cabbage (savoy, finely shredded)
65 grams capers
1 tsp lemon rind (finely grated)
1/2 cup mint (finely chopped)

Recipe Directions for Pesto fish kebabs

  1. cut fish into 2 cm cubes, combine with pesto and 1 tbs of parsley in medium bowl. Thread onto 8 skewers.

  2. Cook kebabs, in batches, in heated large lightly sprayed frying pan until browned and cooked as desired. Cover to keep warm.

  3. add cabbage to same heated pan; cook, stirring until just tender. Stir in remaining parsley, capers , rind and mint.

  4. Serve fish kebabs on stir fried cabbage.
