Recipe Ingredients for Pesto Chicken Stuffed with Asparagus and Feta Cheese

400 grams boneless skinless chicken breasts
8 spears asparagus
1/4 cup pesto
1/4 cup feta cheese
1 clove garlic

Recipe Directions for Pesto Chicken Stuffed with Asparagus and Feta Cheese

  1. Preheat oven to 450 degrees F

  2. Lightly grease a baking dish.

  3. Cook asparagus in the microwave on High until bright green and just tender, 1 to 1 1/2 minutes. Set the asparagus spears aside.

  4. Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of about 1/4 inch.

  5. On the flat chicken, use a pastry brush to spread a coating of pesto. Arrange feta crumbles and add asparagus and minced garlic. Roll up and place on baking sheet, seam down. Again, with the pastry brush, apply a coating of the pesto to each chicken breast and sprinkle with garlic.

  6. Bake in the preheated oven until the chicken juices run clear, about 25 minutes. Or if you're paranoid like me, till the thermometer reads 180 degrees Fahrenheit.
