Pesto chicken on a bed of quinoa and lentils in a creamy goat cheese and roasted red pepper dressing with olive oil.

Recipe Ingredients for Pesto chicken with quinoa, lentils, roasted red peppers and goat cheese

0.41 cup (dry) (uncooked) Quinoa Organic Grain
172 grams Chicken, Breast, Meat Only
100 grams Roasted Red Peppers
1 cup, chopped Peppers, Sweet, Red
1 1tsp Olive Oil
1 clove(3 g) Garlic
1 tablespoons Basil Pesto

Recipe Directions for Pesto chicken with quinoa, lentils, roasted red peppers and goat cheese

  1. Rinse and drain quinoa and lentils. Bring 2 cups of water to a boil and add them. Let them boil and then stir and bring down to medium-low simmer for 20 minutes.

  2. Meanwhile, cut up roasted red peppers, raw red peppers and add to a bowl with garlic, olive oil and crumbled goat cheese.

  3. Cut up chicken marinated in pesto into strips and cook in frying pan with olive oil.

  4. When quinoa and lentls are finished cooking, add everything to the pot and let it come together so the mixture is creamy.

  5. Serve (for 2).
