Huancayo style potatoes: a Peruvian potato salad made with potatoes, cheese sauce, lettuce, eggs and olives. Farmer's, feta, ricotta, queso fresco, or a combination of any of these may be used instead of cottage cheese.

Recipe Ingredients for Peruvian potato salad

5 peppers, spicy
2 garlic cloves, peeled
400 g Cottage Cheese
1/2 cup olive oil
2 eggs, hard boiled, sliced
4 olives, sliced
4 potatoes, boiled and sliced
2 cups lettuce

Recipe Directions for Peruvian potato salad

  1. Seed and rinse the peppers.

  2. Heat 1 tbs of the oil and sauté the peppers and the garlic.

  3. In a blender, mix peppers, garlic, cheese, and oil until creamy. Add a bit of milk, if needed.

  4. To serve: Place the potatoes over the lettuce. Cover with the sauce.

  5. Decorate with the eggs and the olives.
