Recipe Ingredients for Peruvian "One Pot"

4 Potato large (3" to 4-1/4" dia) Potatoes, Russet, Flesh And Skin
6 cup, sliced Squash, Summer, Crookneck And Straightneck
3 ear, medium (6-3/4" to 7-1/2" long) yields Corn, Sweet, Yellow
1 cup Quinoa
1 1/2 cup, chopped Peppers, Sweet, Green
1/2 cup Parsley
2 clove Garlic
28 oz Tomatoes Diced

Recipe Directions for Peruvian "One Pot"

  1. dice, chop, put it all in the pot, add 3 cups water and simmer an hour.

  2. Squeeze lime when serving, add salt, pepper and hot chili.
