Use very ripe hachiya persimmon, and remove or grind the skins

Recipe Ingredients for Persimmon muffins

2 cup flour
1 tbsp baking powder
1 tbsp cinnamon
2 tsp ground ginger
1/4 tsp salt
350 g Persimmons, Japanese
1 egg
1/2 cup butter
2/3 cup brown sugar
1 tsp vanilla

Recipe Directions for Persimmon muffins

  1. Mix dry ingredients

  2. Melt butter, blend together wet ingredients, including persimmon

  3. Fold wet and dry ingredients together until just moistened.

  4. Bake at 350F for 20 minutes, makes 12 muffins
