Recipe Ingredients for Persimmon Cookies

2 cups flour
2 persimmons
1 cup sugar
1 egg
1/2 cup shortening
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
1/2 tsp baking soda
1 cup dried cranberries
1 cup walnuts

Recipe Directions for Persimmon Cookies

  1. Dissolve baking soda into persimmon pulp.

  2. In separate bowl, cream together sugar and shortening. Add one beaten egg and blend well.

  3. Sift flour and spices together and add with persimmon mixture to creamed sugar, egg, and shortening. Blend until mixture is smooth.

  4. Fold in cranberries and walnuts.

  5. Drop by rounded spoonfuls onto greased cookie sheets and bake for 10-12 minutes at 350 degrees.
