This is a lovely, unusual Moosewood recipe with many interesting spices. Be prudent with your cayenne: it it's fresh and hot, even 1/8 teaspoon may be too much.

Recipe Ingredients for Persian Yogurt Rice Soup

1 tablespoon olive oil
1 cup onions, chopped
4 garlic cloves, minced
1/2 teaspoon salt
1/2 cup carrots, diced
1/4 cup white rice
3 cups vegetable broth
3 cups spinach
1 egg
2/3 cup plain nonfat yogurt
2 cups cilantro, chopped
1/4 teaspoon ground cardamom
1/2 teaspoon ground coriander
1/8 teaspoon cayenne

Recipe Directions for Persian Yogurt Rice Soup

  1. In a nonreactive soup pot on medium heat, warm the oil and cook the onions, garlic, and salt for about 10 minutes, stirring frequently. Add the carrots and cook for about 5 minutes. Stir in the cardamom, coriander, and cayenne.

  2. Add the rice and the stock/broth. Cover and bring to a boil. Reduce the heat and simmer until the rice is tender, about 25 minutes. Add the spinach and stir well.

  3. In a small bowl, whisk together the egg and yogurt and gradually whisk into the soup. Stir in the cilantro and salt and pepper to taste. Gently reheat.
