Recipe Ingredients for Perline Pasta with Kale & Mushrooms

1 c green onions
8 ounce sliced cremini or white mushrooms
1/4 teaspoon salt
4 garlic cloves
1 tsp crushed red pepper
14 1/2 oz low sodium vegetable broth
4 cups thinly sliced kale
1/4 teaspoon freshly ground pepper
290 g Beef Ravioli
2 tsp grated parmesan

Recipe Directions for Perline Pasta with Kale & Mushrooms

  1. Place the portabella mushrooms and boiling water in a small pot; cover and let stand about 10 minutes. Pour the portabella mushrooms and water in a strainer, reserving liquid. If you want to use the portabella mushrooms, remove the mushrooms from the liquid, rinse thoroughly, and chop coarsely. Line a strainer with a paper towel. Pour the mushroom liquid through the strainer and set the liquid aside.

  2. Heat the oil in a large saucepan over medium-high heat. Add the green onions, cremini or white mushrooms and teaspoon of the salt? cook; cook, stirring frequently, until the mushrooms are browned and tender, about 5 minutes. Add the portabella mushrooms (if using), the garlic, and crushed red pepper; cook, stirring about minute. Stir in the vegetable broth, arugula, and the reserved mushroom liquid; bring to a simmer. Stir in the remaining salt and the pepper.

  3. Cook the ravioli according to package directions? drain and divide between 4 shallow bowls. Ladle the mushroom sauce evenly over each serving. Sprinkle with the cheese if desired.
