Recipe Ingredients for Perfect protein Salad

3/4 cup soybeans, soaked
3/4 cup wheat berries
1/4 cup cider vinegar
1 tsp salt
1/4 cup minced fresh dill
1/3 cup mayonnaise
2 cloves garlic
1/2 cup minced parsley
1 cup tofu, mashed
3 scallions, minced
1 medium carrot, minced
1 small cucumber, minced
1/2 cup red pepper

Recipe Directions for Perfect protein Salad

  1. Wheat berries are made by boiling whole wheat kernels until tender-crisp.

  2. Drain wheat berries and tofu as much as possible.

  3. Combine all ingredients and refrigerate.
