Recipe Ingredients for Perfect Peanut Butter Chickpea Cookies

2 c. cooked chickpeas
1/4 c. peanut butter
2 T. whole wheat flour
1 T. honey
1 t. vanilla extract
1/2 t. maple extract
1/4 t. salt
1/4 t. baking soda
1/4 t baking powder
2 oz Almond Breeze Non-Dairy Beverage

Recipe Directions for Perfect Peanut Butter Chickpea Cookies

  1. Preheat oven to 350F

  2. Combine all ingredients except the peanut butter chips, chocoalte shavings and the peanuts in a food processor and pulse until well combined

  3. Add almond milk one T. at a time while the food processor is running until the dough reaches a smooth consistency

  4. Add the dough into a bowl and fold in the peanut butter chips, chocolate shavings, and peanuts.

  5. Scoop the dough and roll into cookie dough balls and place balls on foil or parchment paper lined cookie sheet

  6. Lightly pat to flatten cookies to desired thickness

  7. Bake at 350 for approx. 10-15 minutes.

  8. Remove from oven, allow to cool on sheet for a few minutes, and then move to a cooling rack to finish cooling
