4 people should be able to enjoy 2 medium sized pancakes each.

Recipe Ingredients for The Perfect Pancake

1 cup whole wheat flour
1/2 cup white flour
3 tsp baking powder
1/4 tsp sea salt
3 tbsp agave syrup
1 large egg
1 1/4 cup skim milk
3 tbsp extra virgin olive oil
1/4 tsp vanilla

Recipe Directions for The Perfect Pancake

  1. Put together all dry ingredients in a bowl.

  2. You may also use 3 tbsp of sugar instead of agave syrup.

  3. Then starting with the milk, add all wet ingredients

  4. to the dry ingredients.

  5. Depending on the day,I sometimes have to add more or less milk.

  6. Today was perfect 1 & 1/4 cups.

  7. I always start with 1 cup & then add from there.

  8. Heat pan to just under medium heat.

  9. While pan is heating, use a fork to whisk ingredients

  10. together, this is when you add more milk if desired.

  11. Do a couple of tester pancakes first & then adjust heat as needed. Use a non-stick pan.

  12. grease ever so lightly & then take out as much as you can with a paper towel. After priming pan, you should not need to add any oil to pan.

  13. If you want to double the recipe, do so exactly...except use 3 eggs instead of 2.
