With this much chicken, I use 1/2 for the soup and freeze the rest for the times I don't have the time to make the stock from scratch!

Recipe Ingredients for Perfect Chicken Soup (borrowed from Leah's Chicken Soup Recipe on Allrecipe.com)

2 1/2 pounds chicken legs
5 stalks of celery
1 large onion, chopped
1 tbsp kosher salt
1 tbsp rosemary, whole
15 ounces corn
1 pound carrots
16 cups water

Recipe Directions for Perfect Chicken Soup (borrowed from Leah's Chicken Soup Recipe on Allrecipe.com)

  1. Place the chicken legs in the largest pot you own with the onions, carrots and celery.

  2. Fill the pot with cold water 3/4 full. Season with salt and pepper and place over medium heat. Bring to a boil, then reduce heat and simmer, covered, 45 minutes to 1 hour, skimming foam as necessary.

  3. Stir the rosemary into the pot and cook 5 minutes more. Remove from heat, uncover, and let cool to lukewarm.

  4. Remove the chicken - remove the skin, bones, etc. and then shred the chicken when cool enough to handle. Add back to chicken stock

  5. Add canned corn and enjoy!
