Perch and mushrooms baked with wine and lemon in foil packets

Recipe Ingredients for Perch with mushrooms

18 oz Ocean Perch, Atlantic
8 oz Mushrooms
1 tbsp Lemon Juice, Canned Or Bottled
1.5 serving Cooking Wine
1 tsp Parsley, Dried
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 tbsp Salted Butter

Recipe Directions for Perch with mushrooms

  1. Saute scallions in margarine until tender.

  2. Add mushrooms and saute until done, about 5 minutes.

  3. Add wine, lemon juice,and parsley; simmer until liquid is mostly gone.

  4. Spray foil with PAM or similar and put a filet on each piece of foil; top with mushroom mixture and seal packet.

  5. Bake at 400F for 20 minutes.
