One of my favorite standby recipes for the crockpot. Sounds crazy, but the flavor is sooooo good! The prep work is so quick and easy and makes a filling meal. The 'condensed soup' item is one can of Reduced Sodium Cream of Mushroom soup and the diet cola can be either Diet Pepsi or Coke (I've even used the Zero versions on occassion.) You'll want to serve over mashed potatoes or with a soft bread to sop up the delicious gravy. I usually make a 2lb roast and save the other half of it to make a beef goulash with egg noodles and mushrooms the next night.

Recipe Ingredients for Pepsi Pot Roast (Slo-cook)

2 lb beef round, trimmed of fat
10 oz Condensed Soup
24 oz diet cola
1 packet Onion soup mix
1/2 cup light sour cream

Recipe Directions for Pepsi Pot Roast (Slo-cook)

  1. Place beef round in crock pot.

  2. In a separate bowl, combine soup, cola and soup mix. Pour over beef.

  3. Cook on low 8 hours or high for 6 hours.

  4. (Optional) After cooking, remove meat (if you can!) to a plate or bowl. Turn crockpot to high and add sour cream. Stir to combine and let thicken the gravy a few minutes. Serve and enjoy!
