Recipe Ingredients for Peppy's Pita Bread

1 1/8 cups water
2 cups all-purpose flour
1 cup whole wheat flour
1 tsp salt
1 tbsp olive oil
2 tsp white sugar
2 tsp instant yeast

Recipe Directions for Peppy's Pita Bread

  1. Pour water into bread machine. Add oil, salt, sugar and flours (in that order). Sprinkle with yeast.

  2. Select 'dough' setting on bread machine.

  3. to form pitas: divide dough into 8 balls. Roll each ball into ~ 6 inch circle and let rise for 30 min on floured counter top. When ready to bake, transfer to greased cake racks (can bake 3 at a time), and place racks directly in oven.

  4. Bake at 500 degrees for 4 1/2 minutes. Immediately upon removal from oven, place pitas into paper bags and seal shut until pitas are cool and soft. Store in plastic bags when cool.
