Makes 12 servings



Quick and flavorful pasta salad. I blanch the carrots and celery in the pasta water just before I drain it. I will try this with turkey pepperoni next time.

Recipe Ingredients for Pepperoni Pasta Salad

12 ounces rotini
1/2 c. carrot
1 c. chopped celery
1/2 c. sliced red onion
12 ounces mozzarella
6 ounces pepperoni
1 c. Italian dressing

Recipe Directions for Pepperoni Pasta Salad

  1. Prepare pasta according to package.

  2. Slice carrots and celery at a bias, make the pieces bite size, not too small. Add to pasta water just before draining.

  3. Drain Pasta and rinse.

  4. Add pasta and remaining ingredients. Chill for 2 hours. You may want to add more dressing if it gets a little dry. You can also add slices olives if desired.
