Chicken Pepperonata with 1 1/4 c pearled barley prepared according to cooking instructions.

Recipe Ingredients for Pepperonata

1 tsp canola oil
4 red bell peppers
2 large onions
8 garlic cloves
4 Cherry Peppers
2 tbsp fennel seeds
1 tsp salt
1 tsp black pepper

Recipe Directions for Pepperonata

Heat oit in large skillet over medium-high heat. Add bell peppers, skin side down, and cook until skins are browned, 5-6 minutes. Transfer peppers to 6-quart slow cooker. add onions to skillet and cook, stirring, until softened, 5-6 minutes. Transfer to slow cooker. Stir in garlic, Peppers, fennel seeds, salt and black pepper. Add drumsticks to slow cooker. Cover and cook until chicken (8 chicken thighs) is fork tender, 3-4 hours on high or 6-8 houtd on low.
