Recipe Ingredients for peppered zucchini

4 cups zucchini
1 onion
1 red pepper
1 tablespoon sesame seed oil
1 tomato

Recipe Directions for peppered zucchini

  1. scrub (clean) zucchini and cut into 1/4" slices

  2. chop red pepper

  3. slice onion into thin slices

  4. cut tomato into small wedges or use cherrie tomatos cut in half.

  5. Saute first 3 ingredients in oil for 5 minutes.

  6. Add tomatos and saute for another few minutes.
