Recipe Ingredients for Peppered White Beans and Corn

1 tablespoon olive oil
1/2 small onion, chopped
1 clove garlic
1 3/4 cups white beans
1 cup frozen corn
3 jalapeno peppers, sliced
1 teaspoon cumin
1 teaspoon cumin seeds
1 teaspoon parsley
1/4 teaspoon oregano
1/4 teaspoon salt
1 black pepper to taste

Recipe Directions for Peppered White Beans and Corn

  1. Sautee onions until brown. Add garlic and peppers, cook for one minute, then add corn.

  2. Add beans with fluid from can, spices.

  3. Stew until beans are cooked through and fluid is dissolved.
