pork tenderloins with a creamy mushroom sauce!

Recipe Ingredients for Peppered Pork in Mushroom Sauce

1 lb pork tenderloin
1 tsp pepper
1/4 tsp salt
2 tsp olive oil
1 cup fat free chicken broth
2 tablespoons flour
2 tsp dried rosemary leaves, crushed
8 oz fresh mushrooms

Recipe Directions for Peppered Pork in Mushroom Sauce

  1. cut pork into 4 equal pieces

  2. flatten pork pieces with flat side of meat mallet until less than 1/2 thick

  3. sprinkle both sides of pork with pepper and salt; press into meat

  4. in a 12-inch nonstick skillet, heat oil over medium high heat

  5. add pork, cook about 5 minutes, turning once until brown

  6. in a small bowl, mix broth and flour until smooth

  7. add broth mixture and remaining ingredients to skillet

  8. heat to boiling, reduce heat, cover and cook 8-10 minutes until pork is no longer pink in center and mushrooms are tender

  9. *note, this is pretty peppery, I'd suggest using a lesser amount of pepper to season the pork.
