Meatballs in a stroganoff style sauce

Recipe Ingredients for Peppered Meatballs

1 lb. Ground Beef, 95% lean meat
1/2 cup Bread Crumbs, plain
1/2 cup Parsley, chopped
1/2 tsp Salt
1 tbsp Onion, minced
1 tsp Peppercorns, crushed
1 Egg, slightly beaten
1 tbsp Olive Oil
1/2 cup Chicken Broth
1/2 cup Sour Cream, Reduced Fat

Recipe Directions for Peppered Meatballs

  1. Place beef in mixing bowl. Mix with hands the bread crumbs, parsley, salt, chives, crushed peppercorns and egg. Blend and shape into 1" meatballs.

  2. Heat oil in large skillet

  3. Add the meatballs. Brown over medium-high heat.

  4. Lower heat. Add broth and bring to a simmer. Cover. Cook 10-15 minutes.

  5. Stir in the sour cream . Heat, but do not boil the sauce.

  6. Serve meatballs in sauce.
