The Somersize Recipes pg 244 Substitute 2/3 cup of red wine and 2 tbsp bourbon for the beef broth

Recipe Ingredients for Peppered Filet of Beef with Bourbon Sauce

24 oz steaks
2 tsp salt
2 tbsp black peppercorn
4 tbsp butter
4 oz bacon
3 cloves garlic, chopped
14 oz beef broth

Recipe Directions for Peppered Filet of Beef with Bourbon Sauce

  1. Season steaks with salt and pepper.

  2. Heat skillet to high heat and melt 1 tbsp butter.

  3. Add bacon and cook until crisp.

  4. Drain, cool then crumble bacon.

  5. Use same skillet, turn heat on high and add steaks and cook to desired done-ness.

  6. Remove steaks and add 1 tbsp of butter and brown the chopped garlic.

  7. Add the beef broth and bring to a boil.

  8. Stir constantly.

  9. Simmer liquid until reduced by half.

  10. Turn off heat and whisk remaining 2 tbsp of butter.

  11. Place steaks on serving platter, add bacon pieces to sauce and drizzle sauce over meat.
