Recipe Ingredients for Peppered Chicken and Shrimp Jambalaya Recipe

1 tbsp olive oil
1/2 lb chicken breast, boneless, skinless
1 1/2 cup onion, diced
1 1/2 sweet red pepper, diced
1 1/2 cup long-grain rice, uncooked
1/2 tsp thyme
1/4 tsp red pepper, ground
1/2 tsp black pepper
1 cup water
32 oz chicken broth
3 cups (29 oz) tomatoes, original diced
1/2 lb shrimp
1/2 tsp hot sauce

Recipe Directions for Peppered Chicken and Shrimp Jambalaya Recipe

  1. Heat oil in a large pot over medium heat. Saute chicken, sausage, onion and pepper for 5 minutes, stirring frequently.

  2. Add rice and saute 2 minutes , stiring continuously.

  3. Add spices and saute for 1 minute.

  4. Add water, broth and tomatoes. Bring to a boil over medium-high heat. Cover and reduce heat to med-low and simmer for 15 minutes.

  5. Add shrimp and hot sauce, cover and cook 5 minutes.

  6. Remove from heat and stir in parsley.
