Texture, color, and crunch all come together in this recipe in a yummy tangle of silky noodles and tender beef strips. Adapted from the I *heart* Trader Joe's cookbook.

Recipe Ingredients for Peppered Beef and Rice Sticks

9/10 lb sirloin
1 tablespoon olive oil
6 7/10 oz dry rice noodles (half a package at TJ's)
1 cup spinach
1 carrot
1/4 cucumber
1 tbsp red wine vinegar
1 tbsp soy sauce
2 tbsp sesame oil
2 green onions

Recipe Directions for Peppered Beef and Rice Sticks

  1. Bring water to boil for the rice noodles. Meanwhile, brush steak with the olive oil and sprinkle with the pepper. Cook them in a medium-hot saute pan over the stove for 2-3 minutes so they are cooked but raw. Keep warm on a plate and set aside.

  2. Wash and slice the carrot. Get the colander you would use for the noodles and place the spinach and carrots in it. When the noodles are done cooking, pour them into the colander. The boiling water will cook the veggies.

  3. Toss the noodles with the cucumber, red wine vinegar, soy sauce, and sesame oil. Add the beef and garnish with green onions.
