uh, it's a curry with tofu and peppers

Recipe Ingredients for Pepper and Tofu Curry

4 tbsp extra virgin olive oil
32 ounces tofu, firm
2 cups canned tomatoes, chopped
2 tsp cumin, ground
2 tsp curry powder
4 tsp ginger, minced
2 tsp sea salt
1 medium onion, chopped
4 small bell peppers, chopped

Recipe Directions for Pepper and Tofu Curry

  1. heat oil

  2. add tofu, stir well, saute till light brown

  3. remove tofu

  4. add all vegetables to pan, saute till slightly tender

  5. add tomatoes and dry spices; stir well

  6. add ginger, stir well

  7. add tofu to curry

  8. Bring to a simmer

  9. Reduce heat and simmer for 5 minutes

  10. serve over brown Basmati rice
